Oyster and Margarita is a seafood and cocktail bar located in Principe Real, Lisbon, at the intersection of 5 roads, and proudly owns a terrace overlooking the district. If you had already heard about O+M you must have heard about it from your friend, or a friend of a friend telling you about ‘the best oysters in the city’. If you visited it at least once, on occasion you find yourself craving a cocktail affair at O+M with a set of bare oysters.

 

But it is not just the finest products, it is the unpretentious but elegant atmosphere of the O+M that makes you choose it as an idle evening out, a date or a friends’ get-together spot.   

 

On your first visit you go for the most popular picks but as a frequenter you get a privilege to notice that while the golden hour is like a good old movie you never miss, the day time is as good, and that the menu has the finest dorado along with the oyster set.​

The birth of concept. In the beginning was the Place.

And the Place was destined to become successful. But was it that easy?

 

Pavel, the founder of O+M, had been searching for the perfect site for some time. At first glance, a small, former ice-cream café with a view of a parking lot didn't seem like the ideal spot. Yet, he immediately recognized its potential. The location was key, close to the bustling Rua da Escola Politécnica but secluded enough to offer a serene evening ambiance. Picture sipping a refreshing wine or a cocktail while enjoying a stunning view of the district as it bathes in the ethereal golden-pink glow of the sunset. Pair that with a serving of fresh oysters and olives to add a culinary delight. The name had to be meaningful, and that's where Bulgakov came into play.

 

And so, 'Oyster and Margarita - Bulgakov' began. With just five tables, no terrace, and only Pavel and his friend in the kitchen, it was a modest beginning. Yet, outlanders in Portugal received it warmly, seeing it as a homage to the classics and an echo of the epoch. Tourists stumbled upon it and lingered, drawn by its unique charm. But it was 2020, a challenging time for the hospitality industry. O+M was no exception, struggling like many others. Despite the odds, community and unwavering persistence kept them afloat. During this tough period, they were lucky to have municipal authorities step in, helping to secure a terrace. It was a small victory that brought a glimmer of hope in uncertain times.​

 

And here is Pavel sitting in front at the table, paint splattered on the t-shirt, glow in the eyes, in the middle of his another project. As he speaks, he waves and receives pats on the shoulder from every other visitor going in and out, his exuberant optimism radiating the space, which eagerly absorbs it. Now about 15 people work at O+M, it has a terrace and you better book a table before dropping by, yet it retains the same enigmatic, no-self censoring atmosphere when with each visit you feel at a privatized party of the roaring 20s among total strangers. Book a table for occasion or without, get a set of oysters plain and the ones with toppings, a Behemoth cocktail and just let yourself drown into the night with the city.
